Carambola, Star fruit or Chinese gooseberry as it is known popularly in Ecuador comes from South Asia. It measures five to twelve centimeters long with six centimeters of width. It is a very good source of antioxidants for their main phenolic compounds that are the epicatechin and proanthocyanidins.

Under optimized extraction conditions, the residue represents around 70% of the total antioxidant activity and the total polyphenolic content, however, it only contributes 15% of the weight of the whole fruit
