Carambola, Star fruit or Chinese gooseberry as it is known
popularly in Ecuador comes from South Asia. It measures five to twelve centimeters long with six centimeters of
width. The main harvest seasons are from November to January.
The Star Fruit tree in its mature state can produce
around 112 to 160 kilograms of fruit. It is a very good source of
antioxidants for their main phenolic compounds that are the
epicatechin and proanthocyanidins.

The Star Fruit residue, which is normally discarded during the processing of the juice drink, contains an active antioxidant much higher than the juice extracted using several methods to evaluate the antioxidant activity. Under optimized extraction conditions, the residue represents around 70% of the total antioxidant activity and the total polyphenolic content, however, it only contributes 15% of the weight of the whole fruit
